Benzaldehyde (苯甲醛, běn jiǎ quán) is an organic compound that gives almond its characteristic aroma and flavor. In the context of [Shaoguan](https://shaoguantea.com/glossary/shaoguan/) tea, benzaldehyde is the key aromatic compound responsible for the rare and prized natural almond aroma found in certain wild ancient tree black teas from [Luokeng](https://shaoguantea.com/glossary/luokeng/). Analysis shows that benzaldehyde constitutes approximately 40% of the total aromatic profile of these teas. Unlike synthetic almond flavoring, this compound develops naturally in the tea leaves through a combination of the specific wild ancient tree cultivar, terroir conditions, and traditional craft processing. Benzaldehyde also occurs naturally in many other foods including cherries, peaches, apricots, and brandy.
